Maybe it seems unbelievable for some of you but Indian food really liked me. Until I’ve come back from India did I realize that the products giving me stomach aches in Poland, have stopped doing that! Magic cuisine.

But let’s start from the beginning.

I got to know the India cuisine (or rather a small part) from the “home-made” and diners side. We’ve been eating the home-made food, visiting social projects, and then, in the kanthari institute the cooks Joseph and Shrema served us the food.

Remember that India is enormous (if someone does not know that, take a map and compare it with Poland. For example: I’ve spent 33 hours in a train going from the east to the west). And if they are enormous, they must be culturally and culinary diverse.

I was in the south and I want to show you what I have tasted there.

It’s just a little piece of culinary diversity in India.

You eat with hands in India, without cutlery and most of the time on metal plates. I mean, not everywhere. There are spoons, forks available but the Hindus mainly eat without them.

It’s hard to get used to it because eating rice with sauce could be problematic. But you can do it! Of course, you will end up with dirty hands and it can be a little messy. So the more sensitive ones grab a spoon.

I love to walk barefoot and I got used to eating with hands. Just remember – grab food with your right hand only, because grabbing it with the left is perceived as an insult. I forgot myself once. I remember the piercing look of the girl who cooked for us to this very day.

People have warned me: “all you will experience in India is stomach pain”. I’ve prepared myself mentally for a week of stomach aches, especially because my stomach isn’t the strongest one. But… WOW! Nothing happened.

For 3,5 weeks I was healthy. What is more – broccoli, green peas or cabbage stopped to be bad for my stomach and in Poland they always gave me stomach aches. Maybe it’s the matter of hot spices, which are used by the Hindus in great amounts.

Naturally I haven’t been drinking water of unknown origin, everyone scoured their hands carefully before the meal, I’ve avoided cold unbottled beverages.

Fellow countrymen advised me: “drink a good sip of a Polish vodka every morning – this is the best remedy for digestive problems”. Um. I didn’t have to.

But I don’t want to talk about gastroenterology so let’s talk about gastronomy.

When people ask me what I used to eat in India I answer: rice,  crepes (dosa), flatbread (chapati), papad and souces. Vegetarian heaven.

Everyday I’ve been drinking masala coffee (coffee with milk, spices and sugar) and masala tea (tea with milk, spices and sugar). It was delish… Sometimes I try to prepare it by myself at home in Poland and sometimes it tastes almost like in India. Almost. Sometimes:)

I was wrong that in India they eat paneer every day, in kilograms. I think that’s just my strong fantasy. Of course, in restaurants there are a lot of dishes with paneer but people eat it from time to time at home (of course where I’ve been, I don’t know how it’s in a diifferent part of India). And how happy I was when I could boast about the fact that i can make a paneer myself (a paneer note as a reminder: Paneer).

I’ve just realized that I haven’t eaten sweets in India or I’ve eaten but not so many. Interesting. Maybe the sweetness of masala chai was my substitute for sweets.

So…I know that there’re still a lot of Indian food to try.
